Recipe: Triple Layer Healthified ‘Twix’ Bars
These triple layer healthified Twix inspired bars are such a dream! They’re gluten free, dairy free, and vegan! They taste so rich and indulgent yet are completely refined sugar free.
The 3 different layers in them make these bars taste so wonderfully dynamic and delicious. A pure burst of flavour with every single bite!
Despite being 3 layers – they’re actually quite simple to make – requiring only super simple whole food ingredients.

What You Need:
- One necessary tool to make this recipe is a food processor! This Cuisinart processor is honestly one of the best kitchen investments I’ve made. You can use it for so many things! In this recipe you will use it to grind the oats and hazelnuts for the base layer as well as to process the middle caramel layer which is made up of peanut butter and dates
- An 8 x 8 pan or a 9×5 pan
- A mixing bowl (just one!)
- 1 spatula, 1 fork, and a small sharp knife (to cut the bars)
- An oven to bake the base layer
- A stove top to melt the chocolate for the top layer
Some Recipe Notes:
- You can easily sub the hazelnuts for almonds or even pumpkin or sunflower seeds
- If you’d prefer to skip the step of grinding the oats and hazelnuts – you can use store bought oat and hazelnut flour instead. You could also swap the hazelnut flour for almond flour as it’s a little more easy to find
- These bars MUST set in the freezer for 2 hours. After that, remove from the freezer and allow to sit on the counter for 20-30 mins before cutting into. If you find the chocolate is cracking when you cut into them, you can allow them to sit out for a little longer
- You can bake these in a 8×8 pan or a 9×5 pan. I prefer an 8×8 pan so they are a little less thick but either can work great!
Ingredients
BASE LAYER:
– 1/2 cup whole rolled oats (ground into a flour)
– 1 cup hazelnuts (ground into a flour)
– 1/4 cup maple syrup
– 2 Tbsp. melted coconut oil
– Pinch of sea salt
MIDDLE LAYER:
– 1/2 cup peanut butter
– 1/2 cup medjool dates
– 1/4 cup maple syrup
– Dash of vanilla
TOP LAYER
– 1 cup chocolate chips
– 2 Tbsp. coconut oil
Instructions
– Pre-heat oven to 325°F convection (or 350°F bake)
– Grind oats in a high speed blender or food processor. Remove oats and place in a medium sized mixing bowl. Next, grind the hazelnuts in your blender or food processor. It’s best to do so separately to ensure you reach a fine flour like texture for both
– Melt coconut oil (I do so in the oven as it’s preheating)
– Place all ingredients for base layer (ground oats, ground hazelnuts, melted coconut oil, a pinch of sea salt, and maple syrup) into a large bowl and mix until well incorporated
– Firmly press the base layer into an 8×8 pan and bake for approximately 11-13 mins. You want the edges to appear lightly golden brown (it’s okay if it still looks a little bit moist on top – just be sure it’s not too wet).
– Place all the ingredients for your middle layer into a food processor and process until you reach a smooth homogenous texture. Ensure the dates are all ground up and you reach a paste like texture.
– Now it’s time to melt your chocolate – in a small pot add the coconut oil and the chocolate – and heat on low heat. Continuously stir to ensure it does not burn! As soon as the chocolate is all melted and smooth, remove from heat.
– Once the base layer is finished baking, place the middle layer on top of the base layer. To do so, grab a clump with your hands and flatten into a 1/2 inch thick “sheet” – you can do so in sections. Be sure the middle layer evenly covers the entire base layer. Then pour the melted chocolate on top of the middle layer
– Immediately put in freezer – allow to set for a minimum of 2 hours
– Once the chocolate has hardened, remove from the freezer. Allow it to sit for 20-30 minutes and then cut into squares. Garnish with hemp hearts if you desire. These bars are best enjoyed right away or else stored in the fridge or freezer until you’re ready to eat.
