Recipe: The BEST “Creamy” Dairy Free Pasta!

This dish is DELICIOUS! It’s creamy, decadent, and indulgent tasting – while also happening to be dairy free, gluten free, and loaded with undercover sources of protein! I love it as a take on an Alfredo – not only does it not use dairy it also doesn’t use any nuts. Not that I have anything against nuts but sometimes I find dishes that use them as the main sauce ingredient sit very heavy with me. Needless to say – this dish is a great lighter option while still being loaded with goodness!!

Ingredients

For the Dairy Free Cream Sauce:
– 300g silken tofu
– 1 clove garlic (use 2 if small)
– 1/3 cup nutritional yeast
– 1 tsp. lemon juice
– 2 Tbsp. olive oil
– 2 Tbsp. water (plus more for thinning if needed)
– 1/2 tsp. sea salt
– 1/8 tsp. black pepper
– Optional: a pinch of nutmeg or chilli powder

For the pasta:
– 1 box “Chickapea” Pasta (although whatever your favourite kind is great – I love this type as the only ingredients in it are chickpeas and lentils)!
– 1 Tbsp. olive oil (for frying)
– 1 medium white onion, finely chopped
– 1 clove garlic, minced
– 1 medium head of broccoli, chopped into florets
– 4-5 stalks of kale, finely chopped

Instructions

– Pre heat a pot of boiling water to cook pasta in
– Heat a large cast iron fry pan, add oil, garlic and onion and sauté until golden brown
– Once golden brown, add the broccoli and kale to the pan and continue to sauté
– Once water is boiling, add your pasta and cook according to package directions
– In the mean time, add all ingredients for the sauce into a vitamix or blender and mix until well combined. Add more water if you want the sauce less thick
– Taste test the sauce, adding a pinch of the nutmeg or chilli powder if you want a hint more flavour
– When noodles have finished cooking, strain and rinse. Add veggies and noodles back into the noodle pot, pouring the sauce over top (you will likely have left over sauce)
– You might need to re-heat for a moment as the sauce will not be hot
– Serve into bowls. I highly recommend garnishing with homemade cashew parmesan or additional nutritional yeast!
