Anyone else occasionally feel like an actual cookie monster? To be honest, that’s me on the regular! I absolutely loveeee cookies – but sometimes I don’t feel so great after eating them (like when they’re loaded with refined flours, sugars, and dairy).
However, when it’s cookies like these ones – that is NOT an issue! Instead you get the best of both worlds – and feel great after eating them! These cookies are particularly impressive because they’re 100% grain free yet have an incredibly fluffy texture. Not that I have an issue with grains – however sometimes it’s nice to have a snack without them. These ‘Peanut Butter Hemp Cookies’ are composed of homemade almond flour and hemp flour (don’t worry it’s not as complex as it sounds to make!) resulting in a cookie that’s loaded with healthy fats and protein – along with all the peanut butter-y goodness!

Ingredients
– 1/2 cup almonds
– 1/3 cup Eaton hemp hearts (these will be ground into a flour) + 1/4 cup Eaton hemp hearts (added whole) – use MEG20 for 20% off your order!
– 1/2 tsp baking soda
– 1/4 tsp sea salt
– 1 large pasture raised egg
– 1/2 cup peanut butter (be sure it’s a natural kind)
– 1/2 cup raw cane sugar
– 2 Tbsp maple syrup
– 2 Tbsp. coconut oil (soft not melted)
– 1/2 cup (or more!) dark chocolate chips
Instructions
– Pre-heat the oven to 325°F convection
– Place the almonds into a blender or vitamix and blend for a few seconds so they begin to break into finer pieces. Then add the 1/3 cup hemp hearts and blend until you reach a very fine flour like consistency – you might need to mix it around a bit with a spoon if it’s getting stuck beneath the blades of the blender. It really should look like flour when all is said and done
– Place the ground almond/ hemp flour into a bowl and add the baking soda and sea salt. Mix well
– In another bowl, add the peanut butter, egg, maple syrup, coconut oil, and cane sugar
– Mix very well. Then add the dry ingredients (almond/ hemp flour mixture) to the bowl of wet ingredients. Also add the additional 1/4 cup of hemp hearts, ensuring they’re well stirred throughout
– Add the chocolate chips to the mixture (it’s best use your hands to mix the batter to ensure everything is well incorporated)
– You might find the batter a touch oily, but don’t worry – that’s just what makes the cookies so delicious and moist
– Roll cookies into golf ball sized shapes, and then lightly flatten with a fork to about a 1/2 inch thick
– Place on a cookie tray and bake for 8-9 minutes – the cookies can still look goey on top when you take them out, but they shouldn’t look super wet
– Allow to cool for a few minutes before removing from tray
– Enjoy!
