Radish hold a special place in my heart as they’re often the first to show up in the garden come Spring! Although they excite me and I like using fresh radish as a garnish, I can’t say I like eating too many of them raw – they’re just a bit bitter if you know what I mean? However, this recipe has changed everything for me! Roasting radish (along with their tops) has me loving them more than I ever thought was possible. I hope you find the same to be true as you try out these delicious sweet yet savoury roasted miso radish 🙂
Ingredients
– Approx. 1 dozen radish, tops remaining
– 2 Tbsp. miso paste
– 2 Tbsp. warm water
– 1 Tbsp. raw honey
– 1 Tbsp. olive oil plus more for drizzling
Instructions
– Pre heat oven to 350°F
– Rinse radish with water, place on a cookie tray, and give them a little drizzle of oil
– Bake radish for 20-25 minutes. The longer you keep them in, the more crispy the tops will become and the more tender the roots will be
– In the mean time, prepare your miso sauce by placing all ingredients into a jar
– Stir the sauce until the ingredients are well incorporated
– Once the radish have finished roasting to your liking, remove from oven
– Generously pour miso sauce of radish, mixing until well combined (note you might have left over sauce, but if you like it saucy like I do you likely won’t!)
– Garnish with sesame seeds and enjoy as a yummy side dish
