This is the ultimate comforting dish! It’s hearty, nourishing, and the perfect amount comforting! The texture is a mix between a soup and a curry. I like it nice and thick, but you can add as much liquid as you want to water it down. It tastes great topped with fresh herbs or kale. My partner and I go through phases of eating this dish a minimum of once a day – for weeks on end! We just feel SO good when we eat it!

Ingredients
Serving size: approx. 4 bowls
– 1 Tbsp. oil for frying
– 1 medium white onion
– 1 clove garlic, minced
– 1 clove ginger, minced
– 1 tsp curry powder
– 1/2 tsp of the following: cumin, cardamom, turmeric, sea salt, chilli powder (optional)
– 2 cups split red lentils
– 5 cups water
– 2 cups sliced carrots (yams also work well)
– 1 small can tomato paste (150mL)
Instructions
– Pre heat a large pot on medium heat, adding the oil you’re using for frying
– Add the onion, ginger and garlic, and allow to cook for 4-5 minutes
– Next add the spices, mixing them throughout onions
– After the spices are well incorporated, add the lentils, water, tomato paste, and carrots
– Bring to a boil with the lid on, then turn to low heat and allow to simmer for 15- 20 minutes
– You will know things are finished cooking when your carrots/ yams are fork tender, and the texture is fairly consistent. Feel free to add more water, if you want more of a soup consistency
– NOTE: you can either eat as is, or blend the mixture for a more smooth texture. I like to blend a few scoops but keep the rest of it as is. The choice is totally yours and both are great 🙂
– Garnish with fresh kale or cilantro!
