This is the ultimate hearty, healthy loaf! I was inspired to make it as I attempt to dramatically limit the amount of sugars in my diet to help with my adrenals and hormone balancing. In all honesty I was actually surprised with how incredible it turned out – considering there are NO added processed sugars, contains very little oil, and it’s made with fully whole grain flours! I was craving simple, so I chose not to add any dates, raisins, nuts, etc. However, the skies the limit in terms of doing so with your add ins of choice 🙂 I find a slice of this loaf tastes great topped with a drizzle of almond or sunflower seed butter – but also tastes great on it’s own as well!

Ingredients
Dry
– 1 cup oats ground into a flour
– 1/2 cup red fife flour (could use spelt instead)
– 1/2 cup buckwheat flour
– 2 tsp baking powder
– 1/2 tsp baking soda
– 1/4 tsp cinnamon
– 1/4 tsp nutmeg
Wet
– 1 super ripe banana
– 1/4 cup dates
– 1/3 cup apple sauce
– 1/4 cup avocado oil
– 2 pasture raised eggs
– Optional: 2 Tbsp. maple syrup (omit if you’re looking for the lowest sugar option possible)
– 1 cup grated carrots
Instructions
– Pre-heat your oven to 350°F (convection)
– Place your oats into a blender and blend until you reach a fine flour like consistency
– Next add all dry ingredients to a bowl including the ground oats, and mix well
– Place all wet ingredients (except carrots) into a blender and mix until very well incorporated
– Add the wet ingredients from the blender into the well mixed dry ingredients
– Mix the wet with the dry until just combined
– Fold the grated carrots into the mixture
– Prepare a loaf pan: I like to coat mine in coconut oil and then dust with buckwheat flour
– Pour batter into the prepared loaf pan and then sprinkle the top with oats and/or hemp hearts. Place loaf into the oven, baking at 350°F for 20 minutes
– Next turn your oven down to 325°F and bake for another 7-10 minutes
– NOTE: you might need longer than the 30 minutes, depending on the strength of your oven (mine cooks things fast!). In order to check if your loaf is done, insert a butter knife into the centre. It should come out fairly clean!
– Once finished, allow to cool for 30 minutes, before removing from pan, and cutting into slices! As mentioned, it tastes amazing on its own or with a touch of nut/ seed butter on top!
