These little gems are the perfect fuel for endurance activities like long distance running, swimming, and hiking. Beetroot powder is especially great at helping promote blood circulation and reducing inflammation. I find these bliss balls the perfect amount hearty, sweet, decadent, and satiating – the perfect snack to fuel you when you’re needing a little pick-me-up!

Ingredients
– 3/4 cup organic Medjool dates
– 1 cup raw cashews
– 1/2 cup walnuts
– 1/4 cup coconut flakes
– 1 Tbsp coconut oil (Naked Coconuts is my fave brand)
– 1/4 tsp vanilla
– Pinch of sea salt
– 1 Tbsp. Beetroot powder (I buy Organic Matters Beet Powder or Salus Beetroot Crystals)
Instructions
– Place cashews and walnuts into a blender/ food processor and mix until you reach a thick flour like consistency
– Next add coconut flakes and dates followed by all other ingredients
– Continue to mix until you reach desired consistency. If you find them too sticky feel free to add more coconut flakes
– Let dough cool in freezer for 20 mins and then roll into golf ball size shapes
– I like to sprinkle with sesame seeds for added goodness
